SALMON SOUFLÉ

INGREDIENTS

salmon ( about  15 oz or 420g )
4

eggs
2
cups
milk
1
T
parsley
1-2
T
margarine
1

red pepper


PROCEDURE

1. Place salmon, 1 cup of milk, the parsley and the pepper in a blender and blend well. Once blended, drain onto a container.

2. Place eggs, margarine and the remaining milk into the blender. Blend well.

3. Mix this into the previously blended mixture in the container.

4. Place in a baking pan previously covered with margarine and a bit of fine bread crumbs.

5. Bake in the oven at 325oF using a bay marie until the mixture thickens in about 45 - 50 min.

Optionally, you can make a sauce of shrimps to sprinkle on the soufflé or else you can adorn it with shrimps directly.

A bay marie consists of two oven proof containers loosely nested, with the main ingredients in the inner container (the baking pan indicated above) and a suitable amount of water in the outer one.
