From Our Education Program Director
More good news...this month's guest speaker is
Rene Breault, Pharmacist, U of A Hospital, he has agreed to do a
presentation on medications commonly prescribed to cardiac patients. As
well, he plans to give us some general information regarding the taking of
prescription drugs. Most will welcome this opportunity of being up dated on
cardiac drugs - their uses, benefits, side effects and precautions etc.
Rene has a B.Sc. degree in Pharmacy and is
currently involved in studies leading to his doctorate in Pharmacy. In
addition, he has a wealth of clinical experience in pharmacy practice, has
published articles in scientific journals, and has teaching experience as a
clinical instructor in the Faculty of Pharmacy. Moreover, Rene possesses a
rich background of experiences as guest lecturer, tutor and facilitator
having completed clinical rotations in pediatric and anticoagulation
departments at the University of Alberta Hospital. He holds active
professional memberships in the Canadian Society of Hospital Pharmacists,
Pharmacists Association of Alberta, and the Canadian College of Clinical
Pharmacy. He participates in volunteer activities such as investigating

RECIPE
Orange-Prune Muffins
Prunes are an exceptional source of soluble fiber, which helps lower blood
cholesterol.
-
12-pitted prunes cut into eighths
-
1/4 cup orange juice
-
3/4 cup buttermilk
-
1 tablespoon grated orange zest
-
1 3/4 cups unbleached all-purpose flour
-
1 teaspoon baking powder
-
1/2 teaspoon baking soda
-
1/2 teaspoon salt
-
1/4 cup vegetable oil
-
2 tablespoons molasses
-
2 tablespoons dark brown sugar
-
1 egg
-
Preheat the oven to 400°.
-
Spray 12 muffin tin cups with nonstick
cooking spray or line them with paper liners.
-
Cook the prunes and orange juice in a
small saucepan over medium-low heat 4 minutes, or until the liquid has
nearly evaporated. Remove from the heat and stir in the buttermilk and
orange zest.
-
In a large bowl combine the flour, baking
powder, baking soda and salt; make a well in the center.
-
In another medium-size bowl combine the
oil, molasses, sugar and egg, and mix until blended. Add the prunes and
cracked wheat, and mix until blended. Pour the mixture into the well in
the dry ingredients and stir just until combined.
-
Divide the batter among the muffin cups
and bake 20 minutes, or until the muffins are firm and browned.
-
Makes 12 muffins
